Let me start this post off by saying that I am in no way, I mean NO WAY a baker.  I love to eat baked goods, but I hate having to go through the process of measuring and mixing and scooping and baking to get to the goods.  However, after 5 months of this NDD, I caved and finally decided to bake some cookies that I can actually eat.  I ended up making Chocolate Chip Oatmeal Peanut Butter Cookies (COP’s), and was mildly impressed with myself.  And even better, they were super easy to make!

Ingredients (this will make around 12-18 cookies depending on how big… or small you make them)

  • 2 eggs
  • 1 Teaspoon baking soda
  • 2/3 cup old fashioned rolled oats
  • 2/3 cup chocolate chips (I may have used closer to a full cup!  I also used Enjoy Lofe chocolate chips bc they are dairy and soy free!!)
  • 1 cup crunchy peanut butter
  • 1.5 teaspoon vanilla extract
  • 2/3 packed dark brown sugar

Do This:

  • Preheat oven to 350 degrees
  • Mix oats and baking soda together in one bowl
  • In second bowl, beat peanut butter, eggs, sugar and vanilla extract till creamy (well as creamy as crunchy peanut butter will let you get!)
  • Combine two bowls and mix in chocolate chips


  • Scoop into the desired sized balls (insert bad but funny joke here!)
  • Bake 11ish minutes 


  • Let cool and devour

These would be great with any of the following: raisins, craisins, walnuts…you get the point!

To all my Saved by the Bell fans (I’m so aging myself!), I baked these while singing that song the Home Ec teacher sang when Slater realized he was a baking machine!  “We’re baking a cake…la la la la”!

Quick CVS Fix

Simply put, I love CVS.  If I don’t have time for a Sephora or Ulta run, I can get my makeup fix at CVS.  Yesterday I went in to fill my dog’s prescription (the crazy girl is on anti anxiety meds…they don’t work!), and in about 3 minutes I grabbed some goodies, both favorites of mine and something new. 

First up, my go to Sally Hansen Miracle Gel Nail Polish.  I’m obsessed with this stuff!  I love that there are a million colors to choose from, it’s super fast drying and it looks like I went to the salon for a professional manicure!  This time I snagged the color Greyfitti. I wanted a grey color, but this comes off a little bluer than I wanted, but I still really like the color!

I also grabbed a new foot file.  I kid you not, this thing is the bomb! I have tried every file, pedegg, scrub you can imagine, and nothing… I mean NOTHING works as well as this foot file!  It has a course side and a soft side and I don’t know, it just makes my feet ridiculously smooth.  You just have to try it!

Last but not least, I snagged REVLON’S new Ultra HD Matte Lipcolors in Seduction and Passion. I’m all about the matte trend right now, and I LOVE LOVE LOVE Anastasia Beverly Hills matte lipsticks, so I thought I’d give a drugstore brand matte lipstick a try.  I’m happy I did because I do like it.  It isn’t as matte as Anastasia Beverly Hills’, but it also doesn’t dry my lips out.


Overall a successful CVS visit!

Great Balls of…Fiber!

We have a local farmers market by my house called Roots (pronounced  more like “ruts”) that has been around, from what I’m told, forever! It’s pretty cool. You can find any kind of vegetable you’d ever want or need, there are tons of stands for meats, flowers, cheeses, candy and spices. It’s a person on a diet’s worst nightmare because pastries are everywhere and literally call your name until you buy something!  And it’s not like they lump all the pastry stands together, no, they are placed sporadically throughout the market so every time you turn a corner there’s another whoopie pie or donut stand smacking you in the face!  Again…amazing!



For someone on a NDD, it’s torture.  I probably look like a crazy person zipping thru the market with my eyes down trying not to look at all the delicious treats!  However, I did look up at just the right time to find my new favorite snack.  Amongst all the cakes and whoopie pies was a small section of “healthier” snacks, one of which being FIBER BALLS!  


These are not only delicious, but are super easy to make yourself! I’ve made different variations of these (with craisins, flaxseeds, whey protein, etc.), but to make these, this is what I would do:
1/2 cup peanut butter

1/2 cup honey 

1/2 cup oatmeal

Pinch of salt

1/4 cup wheat bran

1/2 cup raisins

1/2 cup m&m’s

Mix all ingredients together and form into balls about inch in size.  You can serve as is or even freeze them and grab them as needed!

Winging it!

I am by no means a cook, chef, baker… not even a dang line cook, but I decided I didn’t feel like going to the grocery store to get the ingredients I needed for the recipe I was going to safely make, so I decided to experiment.  Usually this is dangerous for me, however I must say my husband and I were pleasantly surprised…to the point he said he would like me to make it again! Here’s what I ended up with…


I call this, Chicken a la Veggies. It’s a working title! This is what I used and what I did:

In a sauce pan, cook organic chicken thighs, sprinkled with gourmet sea salt (fancy, I know!) in avacado oil (I rarely really measure anything, so just eyeball it!) till cooked they.  Once done, set them aside and added asparagus, red onion slices and 2 cloves of minced garlic to the same pan and cook till the onion become tender.

Divide the asparagus mix onto two plates, put the chicken back in the sauce pan to reheat, add the cherry tomatoes and handful of spinach. Top it off by splashing coconut balsamic vinegar on top of the chicken ( we got ours in Stone Harbor at an adorable shop called The Well Dressed Olive, but any balsamic vinegar will do.  Heat for just a few minutes, add them to the plates with asparagus and viola! A simple, tasty and healthy dinner!  There are so many adaptions you could make to this, but these were the only ingredients I had at home, so I went with it!  Let me know if you give it a try!

Side note… If you live anywhere near the Jersey Shore, you HAVE to go to The Well Dressed Olive.  It is adorable!!!  We got some awesome olive oils, vinegars and some fun colored/themed pastas!  The employees were awesome and you can taste test every single olive oil and vinegar they have!

Charcoal… Not Just for Cooking Burgers!

We all know I have a serious mask obsession.  I don’t care if it says to leave it on for 30 minutes or 3 minutes.  I always feel refreshed after using one. With that said, I have been dying to try a charcoal mask, and I finally did this weekend.  Life changing!!!!! 

I ended up using one from Origins that I got either as a Sephora freebie or in a Birchbox.  It went on pretty light so I layered it to make a thicker mask and left it one for about 25 minutes.  When I took it off my face felt clean and ridiculously smooth.  I’m not gonna lie, I did get a… yes a pimple, but it was small and it showed me the mask did its job and cleared out my pores.  I’ll take a small pimple if it means my face feels as good as it does after using this mask.  I absolutely recommend it!!

I’m in Non Dairy Cookie Heaven!

I have been searching high and low for some form of a cookie that I can buy at a somewhat local grocery store that doesn’t contain any form of dairy or soy.  The search has FINALLY come to an end.  My Giant just added these to their shelves 


and I am so thankful that they did! I will be the first to admit my sweet tooth is no joke!  Sadly, now that I’m back on the NDD (no dairy diet), I am finding it even harder to not be able to grab a piece of chocolate or cookie (I sound like such an oinker!) when the craving calls.  But what’s really really sad is that I almost cried right there in aisle 2 when I found these babies!  It took a lot for me to not open the box right then and there to see if they tasted like cardboard…but I held out and waited till I got home, and guess what?  They are actually pretty darn good!   These will definitely help me get through the next couple of months!  

I also plan on making @cleanfoodcrush’s Double Chocolate PB Muffins this weekend, so stay tuned!

Well That was Short Lived!

It hurts to say this, but I’m back on the no dairy train.  It was a great FOUR, ugh only four, days, but my sweet baby’s belly just isn’t ready to handle dairy yet.  How do I know, you ask.  Well, the hours of crying, arching of the back and sleeping on the floor next to him in his vibrating chair last night kind of clued me in that the little dairy I had the last couple of days was a BIG mistake!

In his defense, we threw a lot at him the last few days.  Not only did I add dairy back into my diet, but he got his 4 month round of shots AND we had him try bananas for the first time. At first I thought maybe he had an allergy or intolerance to bananas, but after speaking to his pediatrician, we came to the conclusion we brought dairy back into my life a little too soon.  He was fussy, snotty and he kept arching his back like he had stomach pains…all the things he was doing when we first found out he had a dairy intolerance.  

Take a look at his second taste of bananas… clearly my husband was taking too long to get the spoon to him!


So here we go again…in 13 days the dairy should be out of my system and I’ll wait till he’s 6 months old to give it the “old college try” again.  On the flip side… that’s right around Halloween, so maybe I’ll be able to eat alllll the “extra” chocolate I purposely buy!

Dairy Intolerance 101

Have you ever tried to go dairy free?  Ridiculous question right?  Why would you ever want to give up Ben and Jerry’s or pizza or cheese plates?  It’s simple, you wouldn’t want to!  I sure as heck didn’t want to, but when my son started popping pesto (not really, but it looked like it) I made the decision to go dairy free so I could continue to breastfeed. Brace yourself for a graphic picture…


If it weren’t for those baby blues and heart melting dimples I would have been in the car and purchasing formula before the pediatrician finished explaining to me what “dairy intolerance” actually was.  

Let me back up. About ten days after John was born, we were home for only about three days at this point, he started getting really, I mean really fussy before pooping.  He would cry and his poor tummy would make these horrible gurgling sounds for about an hour before he would finally go. Around that time his poop turned bright green and actually looked like a cross between pesto and the grass my dog throws up after pretending to be a cow.  Thank god his first baby check up was a few days after his first “pesto poop”.  At his checkup his weight hadn’t gone back up to his birthweight, so we needed to schedule another weight check appointment for the following week, and in the meantime I was to take poop samples for them to test.  This is not glamorous…not by a long shot!  Anyway, the poop samples ended up testing positive for blood (not visible to the human eye), and I ended up getting a mini lesson on what dairy intolerance is.  Immediately I invisioned my son not being able to eat cupcakes at birthday parties or ice cream on the boardwalk.  What I found out wasn’t so horrible.   A dairy intolerance doesn’t mean allergy.  Actually, very few people actually have a dairy allergy.  Who knew?!  I was relieved to learn that many babies have a dairy intolerance because their tiny bellies aren’t mature enough to break down milk proteins (I later found out that went for soy proteins as well).  I was handed this list of ingredients to avoid. Please don’t mind the water stains… They’re from my major mom fail!


It included EVERYTHING I love to eat.  Clearly my son wanted me to either starve or get into bikini shape way faster than I had planned.  

In the beginning I didn’t think I would last. I didn’t get creative, and I didn’t do any recipe research.  Basically I didn’t do anything other than eat chips with salsa, eggs on rice cakes with guac, and spoonfuls of peanut butter.  That all got real old, real fast!  

It took a few weeks to really notice a difference in my son’s behavior, but slowly his stomach chilled with all the gurgling sounds, and his poops went back to more of a yellow-green color, however they were sill full of mucus (another clear sign of dairy intolerance).  This is when I started looking for different non-dairy foods and recipes and came across my new food crush on Instagram, @cleanfoodcrush.  

So, like I said, things were getting better, but I felt they could be much better.  Something still seemed to be upsetting his stomach. While on a family vacation to the beach, John was almost three months old and I had been on the non-dairy diet for a little over two months, he started getting really fussy again. I panicked and called the doctor, wondering if maybe it was time to switch to formula?  She asked if I wanted to continue to breastfeed, and I told her that I did.  She said the next thing she wanted me to eliminate was soy.

I had no idea how many things soy was actually in!  I had finally found these peanut butter cookies that didn’t taste like cardboard, and I was devouring them! Guess what…they had soy!  Bye bye peanut butter cookies. Bye bye peanut butter (contains soybean oil). Although this made my diet even more difficult, it was so worth it!  My son became a different, in a great way, baby over night! His stomach no longer screamed at me, his poops became normal (if there’s such a thing as normal baby poops), and he was just happier! 

Last week my husband and I went out to dinner for our anniversary and I was bad. I ended up having bread (bread contains flour and flour is on the no-no list) and I had muscles in a white wine sauce, which I’m sure had butter.  I expected John would give me hell for it by having a bad couple of days, but he was completely fine!  I decided to experiment a few days later by sprinkling a little shredded cheese on my eggs and again he was fine. 

Just yesterday we went to his four month checkup (how the hell is he four months already?!?!), and after coming clean to having some dairy, I got the go ahead to start slowly adding it back into my diet!  I’m gonna take it slow, but am still pumped!! I’ll let you know how it goes!

Gym. Target. Laundry. Obvi! (The Jersey girl in me had to go there with the GTL!)

It’s crazy how energized I feel after a ridiculously hard workout, and how exhausted I feel when I don’t work out and chug cups of coffee!  Not that I didn’t get an iced coffee post workout, but I always feel like I’m ready to crush my to-do list after a good workout. I really overused the word “workout” there… sorry about that!

My Target run was supposed to be for toilet paper, deodorant, Silk and my son’s vitamin D drops, but you know how Target is… you can’t leave till the cart is filled with items you don’t really need, but you kinda HAVE to have!

Most of my unnecessary necessary items are gym related today.  Take a look…

The sliders were a last minute addition.  Have you tried these??!!  We use them at the gym and holy crap they are RIDICULOUSLY difficult!  I love how I feel after using them though, so I figured why not use them at home too! Let me know if you want to see some of ways we use them at the gym!

I wanted to do more shopping, but John decided it was time to eat so he let everyone, and I mean EVERYONE know it was time to go! His dad probably trained him to do that!
